Recipe Ingredients for honey roast vegetables

1 red pepper
1 yellow pepper
1 fennel bulb
1 onion
1 eggplant
2 courgettes
2 tbsp honey
2 tbsp balsamic vinegar
2 tbsp olive oil
100 g feta cheese

Recipe Directions for honey roast vegetables

  1. Chop all vegetables and put in roasting dish

  2. add oil, honey, vinegar and season

  3. roast for 45 - 50 minutes until slightly charred
