Added some cinnamon - might be slightly bland... Maybe add fruit - apples and raisins? Maple syrup? Makes 12, full regular-sized muffins, could probably make 36 medium muffins if doubled.

Recipe Ingredients for Honey Oatmeal Muffins

1 1/2 cups Skim Milk
1 1/2 tbsp lemon juice
1 cup rolled oats
2 tablespoons honey
2 tablespoons vegetable oil
1 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt

Recipe Directions for Honey Oatmeal Muffins

  1. Preheat oven to 350 degrees

  2. Make Buttermilk. Mix the lemon juice and skim milk together and stir. Let sit for 5 minutes.

  3. Combine buttermilk and oats in a small saucepan; heat just until warm; set aside.

  4. Grease muffin cups or line with paper muffin liners.

  5. In a large bowl, combine honey and vegetable oil with oat mixture.

  6. Combine flour, baking powder, baking soda and salt; stir into wet mixture.

  7. Pour batter into prepared muffin cups.

  8. Bake in preheated oven until lightly browned, about 30 minutes.
