Recipe Ingredients for honey oat bread

4 cups all purpose flour
1/4 cup honey
1 cup rolled oats
1/2 cup raw sunflower seeds
2 tsp salt
2 tbsp safflower oil
2 cups water
2 1/2 tsp yeast
2 ounces water

Recipe Directions for honey oat bread

  1. bring 2 cups water to boil.

  2. prime yeast in 2 ounces warm water.

  3. in a large bowl add oats, honey and salt and hot water. combine and let sit 20 minutes while yeast activates.

  4. when oat mixture is cool enough to leave your finger in without burning mix in flower and yeast. add sunflower seeds and/or any chopped nut of your choice. pour mixture out onto floured surface and kneed until dough is smooth. use oil to grease bowl and place dough ball in bowl, covered, and let rise for 1 to 1 1/2 hours.

  5. when ball has doubled in size, pour it out onto floured surface. fold it over itself into thirds without squishing it down. fold it into thirds again in the opposite direction, again taking care not to squish all the air out of it. gently roll it into a loaf shape. cover with a warm damp towel and let rise for another 45 minutes.

  6. preheat oven to 375 degrees.

  7. place on baking stone or lightly greased cookie sheet and bake for 35 - 45 minutes, until crust is brown but not burned.
