Fresh beets roasted and tossed with a honey, mustard and balsamic vinegar glaze.

Recipe Ingredients for Honey Mustard Roasted Beets

4 beets, peeled, ends trimmed, and cut into 1- to 2-inch pieces
1 tbsp olive oil
1/2 tsp fresh ground black pepper
1 tbsp Dijon mustard
1 tbsp honey
1/4 c orange juice or juice of 1 orange
2 tbsp balsamic vinegar

Recipe Directions for Honey Mustard Roasted Beets

  1. Heat oven to 400 degrees. Toss beets with oil and pepper and place in a single layer on a roasting pan.

  2. Bake on center rack uncovered until almost tender, about 40 minutes. While the beets cook, mix the mustard, honey, orange juice and vinegar in a small bowl. Pour over the beets. Bake 10 minutes more to glaze.
