Recipe Ingredients for Honey-Lime Salmon with Confetti Corn Salad

1 t grated lime zest
1/4 c fresh lime juice
1 T canola oil
1 garlic clove, minced
2 t honey
3/4 t salt
1/2 t freshly ground pepper
16 ounce salmon fillets
2 c Corn, Sweet, Yellow
1 red bell pepper, seeded and finely chopped
1/2 c chopped red onion
1/4 c chopped parsley

Recipe Directions for Honey-Lime Salmon with Confetti Corn Salad

  1. Combine the lime zest, lime juice, oil, garlic, honey, salt, and ground pepper in a small bowl. Put 3 T of the lime mixture in a large zip plastic bag; add the salmon. Squeeze out the air and seal the bag; turn to coat. Set the remaining dressing aside.

  2. Spray the broiler rack with nonstick spray; preheat the broiler. Combine the corn, bell pepper, onion, parsley, and the remaining dressing in a medium bowl.

  3. Transfer the salmon from the marinade (discard the marinade) to the broiler rack. Broil 5 inches from the heat until the salmon is just opaque in the center and lightly browned on the outside, about 4 minutes on each side. Serve with the corn salad.
