Baked potato stuffed with little goodies.

Recipe Ingredients for Honey Ham (or Turkey) Lightly Stuffed Sour Cream Baked Potato

2 baking potatoes
4 tablespoon Shredded Cheddar Cheese
2 tbsp Sour Cream Regular
2 oz Vitamin D Milk
4 tablespoon butter, salted
1 tablespoon green pepper, chopped
1 tablespoon onion, chopped
1/2 tablespoon minced garlic
1/4 cup spinach, raw
2 ounces Select Honey Ham Water Added Deli Meat

Recipe Directions for Honey Ham (or Turkey) Lightly Stuffed Sour Cream Baked Potato

  1. Preheat the oven to 350 degrees.

  2. Bake or microwave the potatoes. You can microwave the potato to cook the potato, and bake on the final stage only; or you can bake the potatoes in both steps.

  3. While the potato is cooking, in a small fying or suace pan saute the onions, peppers and Garlic in a tablespoon of the butter.

  4. Preserving the skins, remove the potato from skin with a spoon and place the potato in a medium mixing bowl.

  5. Place 1 thin slice of honey ham or roast turkey breast (I use Hillshire Farm), and place in the preheated oven for 5 minutes to warm the meat and skins.

  6. With a handheld mixer on low speed mix together the sour cream, butter, milk and potato. Equally distribute the potato mixture into four halves, atop the meat.

  7. Equally distribute first the spinach then the cheddar cheese across the four halves.

  8. Bake on 350 for 15 minutes and serve.
