Serve over a romaine-spinach, apple, currant and almond salad.

Recipe Ingredients for Honey Dijon Dressing

6 cups romaine
6 cups spinach
1 apple, granny smith
2 tbsp currants
1/4 cup chopped almonds

Dressing:
3 tbsp dijon mustard
1/4 cup apple cider vinegar
3 tbsp honey
1/4 cup water
1 tbsp cornstarch (modified only)
2 tbsp olive oil

Recipe Directions for Honey Dijon Dressing

Mix all but oil in blender. You must use modified corn starch called instant ultra gel because it thickens without heating. While blender is running add oil.
