Recipe Ingredients for Honey Dijon Chicken Breast Saute

1/2 large onion
300 g boneless, skinless chicken breasts cut into 1 inch pieces.
1/2 cup chicken broth
1 tsp garlic
3 tbsp dijon mustard
2 tsp honey
1 tsp tarragon
1 tsp parsley

Recipe Directions for Honey Dijon Chicken Breast Saute

  1. Heat 1 tbsp of chicken broth in a 10-12 inch skillet or wok. Sauté onion in broth over medium heat for about 2-3 minutes.

  2. While onions are cooking, cut chicken into six to eight pieces depending on the size. Add chicken to broth stirring frequently to brown all sides. Add garlic and continue to sauté for one more minute.

  3. Add mustard, 1/2 cup broth and honey. Mix thoroughly and simmer uncovered for about 7-8 minutes on medium-high heat stirring occasionally. Add terragon and parsely.

  4. When sauce is reaches a creamy conistency and reduces in size by about 1/2 to 3/4 it should be ready to serve. Remove chicken pieces first then pour the remaining sauce and onions over the chicken.

  5. Serve with wild rice, whole-grain pasta or steamed bok choi. Calories will vary with the type of mustard and size of chicken breasts.
