Note: really makes 2 servings. Had to double the number of servings to correct the calories to match those of the Mayo Clinic's (because somehow I doubt a chicken breast with only 2 tsp of honey and 4 saltine crackers is 504 calories!!!)

Recipe Ingredients for Honey Crusted Chicken

8 saltine crackers
1 tsp paprika
4 tsp honey
2 chicken breast filets, meat only

Recipe Directions for Honey Crusted Chicken

  1. Heat oven to 375 and spray baking dish with Pam.

  2. Crush crackers, mix with paprika and put in a shallow bowl.

  3. Brush 1 tsp honey on each side of chicken breasts. Dredge breasts through cracker mixture to coat both sides.

  4. Bake 20 - 25 minutes, until cooked through and lightly browned.
