Slightly chewy, lightly sweet, crunchy snack that gives you some good fats and takes the edge off a sweet craving. Enjoy about 8 at a sitting and you'll be satisfied.

Recipe Ingredients for Honey-Cinnamon Pecans

1 lb pecan halves
1/4 c. honey
3 tbls cinnamon
1/2 tsp ground cloves (optional)
1/4 tsp ground nutmeg (optional)

Recipe Directions for Honey-Cinnamon Pecans

  1. Pour 1/4 cup of honey into a small metal bowl.

  2. Add the cinnamon, cloves and nutmeg to honey and mix thoroughly.

  3. Measure 4 cups of pecan halves and place in honey mixture and mix well, until every nut is covered.

  4. Grease a large baking sheet (jelly roll pans work best - because of the sides) with butter or vegetable oil. DO NOT over-do this process or the taste and texture of the nuts will be affected.

  5. Dump the nuts onto the baking sheet and spread to have an evenly spaced single layer.

  6. Bake at 250 degrees for 10 minutes. Remove and stir well with spatula. Spread evenly again.

  7. Bake 10 minutes more. Remove, stir and spread again.

  8. Bake another 10 minutes. Remove. Stir and separate continuously until nuts are cool to touch and don't stick as much (DO NOT TOUCH the nuts while they are hot, wait at least 5 minutes).

  9. Store in airtight container.
