These muffins are best hot out of the oven.

Recipe Ingredients for Honey Bran Muffins

80 g wheat bran
242 g buttermilk, lowfat
70 g Canola Oil
1 large eggs
163 g sugar, brown
5 g vanilla extract
150 g flour, all purpose
5 g baking soda
5 g baking powder
3 1/2 g salt
114 g nuts, pecans

Recipe Directions for Honey Bran Muffins

  1. Preheat the oven to 400 d F. Put paper liners in muffin tin and set aside.

  2. In a large measuring cup weighout the mix buttermilk with bran and let sit at least 10 minutes.

  3. Weight out the nuts and set aside.

  4. In a medium measuring cup mix oil, egg, sugar, and vanilla

  5. In a medium bowl weight the flour, baking soda, saltand baking powder. Whisk together

  6. Add the sugar/eggs to the milk/bran and stir well. Add to the flour mixture and mix until just blended. Stir in the nuts and pput in muffin cups.

  7. Fill 12 muffin cups and bake for 15-20 min.
