Recipe Ingredients for Honey bran muffins

2 cups 2 % milk
2 tablespoons lemon juice
2 large eggs
2/3 cup canola oil
1/2 cup liquid honey
3 cups all-bran cereal
2 cups chopped dates
3 cups whole wheat flour
1 1/2 cups brown sugar
2 teaspoons baking soda
1 teaspoon baking powder
2 teaspoon cinnamon
1 teaspoon nutmeg

Recipe Directions for Honey bran muffins

  1. Grease 12 large muffin tins.

  2. Combine milk and lemon juice; set aside.

  3. Beat egg in mixing bowl. Blend in oil, honey and soured milk. Stir in cereal and dates, set aside.

  4. Combine remaining ingredients in another bowl. Stir liquid mixture into dry ingredients, stirring until just moistened. Spoon batter into cups, filling each to the top.

  5. Bake at 400 F for 24 minutes. Cool. Store in airtight container.
