modified from the Garden Way Bread Book yield: 2 small loaves

Recipe Ingredients for Honey & Beer Whole Wheat Bread

12 oz beer
1 tsp honey
1 1/2 tbsp dry yeast
1/4 cup olive oil
1/3 cup honey
2 tsp salt
2 cups unbleached white flour
3 1/2 cups whole wheat flour

Recipe Directions for Honey & Beer Whole Wheat Bread

  1. Heat beer to warm and add 1 tsp honey and 1 1/2 tbsp dry yeast. Stir and allow to dissolve and become bubbly.

  2. Add oil, honey and salt. Add 2 cups unbleached white flour and beat for 2 minutes.

  3. Gradually add 3 1/2 cups whole wheat flour, knead until smooth and elastic, about 10 minutes.

  4. Let rise twice, shape into loaves. Place in lightly oiled small loaf pans.

  5. Bake at 350 degrees F for 30-40 minutes. Cool on rack.
