Recipe Ingredients for hominy with shredded chicken and peppers

2 tbsp olive oil
1 onion, large, thinly sliced
1 red bell pepper, seeded and cut into 1/2" strips
1 yellow bell pepper, seeded and cut into 1/2" strips
1/4 tsp kosher salt
2 cloves garlic, minced
1 pepper, jalapeno, seeded and minced
2 tsp dried oregano
1/2 tsp cumin
15 ounce white hominy, drained and rinsed
1 cup chicken stock
1 cup plum tomatoes, seeded and diced
2 cups chicken breast,roasted, shredded
1 cup corn, frozen
2 tbsp cilantro, chopped
2 fruit Limes, cut into wedges

Recipe Directions for hominy with shredded chicken and peppers

  1. Heat oil in a large skillet over medium-high heat. Add the onion, bell peppers, and salt. Cook, stirring frequently for 3 minutes. Add the garlic, jalapeno, oregano, and cumin, and continue cooking until the onion is lightly browned and the peppers are beginning to soften, a few minutes longer.

  2. Stir in the hominy. Add the chicken stock and tomatoes, and bring to a boil. Lower the heat slightly and continue cooking, stirring frequently, until the flavors meld and some of the liquid has evaporated, 2-5 minutes. Stir in the chicken and cook until heated through. Season to taste with hot pepper sauce (if desired) and more salt if needed. Ladle into bowls. Garnish each portion with cilantro and serve lime wedges alongside.
