Recipe Ingredients for Homesteader Cornbread

1 1/2 cups cornmeal
2 1/2 cups fat free milk
1 cup whole wheat flour
1 cup all purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/2 cup sugar
2 large eggs
1/2 cup vegetable oil

Recipe Directions for Homesteader Cornbread

  1. preheat oven to 400 degrees F (200 degrees C).

  2. In a small bowl, combine cornmeal and milk; let stand for 5 minutes.

  3. Grease a 9 x 13 inch baking pan - or two 8-inch square pans.

  4. In a large bowl, whisk together flour, baking powder, salt and sugar. Mix in cornmeal mixture, eggs and oil until smooth. Pour batter into prepared pan (or pans).

  5. Bake in preheated oven for 30 to 35 minutes, or until a knife inserted into the center of the cornbread comes out clean.
