Using freshly ground white wheat, this bread is light, tasty, and good for you!!

Recipe Ingredients for HOMEMADE WHOLE WHEAT BREAD

7 1/5 cups WATER, VERY WARM
2 1/2 tbsp SALT
1 cups CANOLA OIL
1 cup HONEY
3 tbsp YEAST
2 tbsp TOFU, POWDERED
14 cups WHOLE WHEAT FLOUR, FRESH GROUND
2 tbsp CRISCO (TO GREASE PANS)

Recipe Directions for HOMEMADE WHOLE WHEAT BREAD

  1. ADD OIL, SALT AND HONEY TO WATER. ADD POWDERED TOFU (AND 3 T. POWDERED GLUTEN IF DESIRED) AND ABOUT 5 C. FLOUR (TO SLURRY CONSISTENCY).

  2. TEST TEMP WITH FINGER. IF LUKEWARM, ADD YEAST AND MIX WELL. COVER AND LET 'PROOF' OR RISE FOR 20 MIN.

  3. WHEN ROUGHLY DOUBLE IN SIZE, TURN MIXER ON LOW AND GRADUALLY ADD REST OF FLOUR.

  4. TURN MIXER (BOSCH WORKS BEST) ON SPEED 2 AND KNEAD DOUGH FOR 6 MIN. CHECK FOR GLUTEN DEVELOPMENT. IF NOT READY, KNEAD LONGER.

  5. WHEN READY, SHAPE INTO 6 LOAVES AND PLACE IN GREASED PANS. BAKE AT 350 FOR 30-35 MIN.

  6. REMOVE FROM PANS IMMED. AND COOL ON SIDES ON RACK, COVERED WITH TEA TOWEL. WRAP TIGHTLY AND STORE FROZEN OR IN FRIDGE.
