Basic, wholesome, whole wheat bread.

Recipe Ingredients for Homemade Whole Wheat Bread

2 1/2 cups warm water
1/3 cup extra virgin olive oil
1/3 cup honey
2 tbsp active dry yeast
6 cups whole wheat flour
6 tbsp Bob's Red Mill Vital Wheat Gluten
2 1/2 tsp kosher salt

Recipe Directions for Homemade Whole Wheat Bread

  1. Combine warm water, olive oil & honey. Mix in yeast and set aside until frothy.

  2. Meanwhile, in stand mixer, combine 3 cups of the whole wheat flour, gluten according to directions (some brands have different instructions), and salt.

  3. Add yeast mixture when frothy and mix with paddle or whisk attachment 3 to 4 minutes. Batter should be rubbery-looking. Cover and let rise til doubled (about 30 min).

  4. Change to dough hook attachment and mix down batter. Add two of the remaining cups of flour and mix well. Add the last cup gradually, as needed until dough cleans the bowl. (You may need more than the 6th cup or less, depending on your climate.) Cover and let rise until doubled. (about 30 min)

  5. Spray two large loaf pans with cooking spray. Punch down dough and form two loaves. Place in prepared pans, cover and let rise until doubled. (30 to 90 min) Preheat oven to 350 degrees.

  6. Bake in preheated oven 40 min. Remove from pans and cool on cooling rack.
