This is a variation on the ?Classic Beef Stew? on the Weight Watchers website. Can be served over garlic mashed potatoes or with potato pieces in the stew itself (see variation at end of instructions).

Recipe Ingredients for Homemade Weight Watchers Classic Beef Stew

48 oz Beef
2 medium (2-1/2" dia) Onions
8 medium Carrots
12 oz Peas
1/4 cup Gold Medal All Purpose Flour
1 tsp Salt, Table
1 tsp Pepper, Black
2 tbsp Vegetable Oil, Canola

Recipe Directions for Homemade Weight Watchers Classic Beef Stew

  1. Toss the meat in the flour, salt, and pepper to coat.

  2. Heat the oil in a Nesco (or other countertop cooker) at a high heat (350-400F). Add the meat, brown it, and then remove it from the Nesco.

  3. Cut the onion into even, bite-sized pieces, as desired. Cook for 4-6 minutes, or until slightly translucent and soft.

  4. Add the meat back into the cooker, along with the stock.

  5. Cut the carrots into even pieces, such as 1/4? rounds, and add to the pot.

  6. Cook for 1 ? 1.5 hours, or until meat is tender, but not falling apart.

  7. Defrost the peas under running water. Add them to the pot about 10 to 15 minutes before the stew is finished.

  8. Stew may contain quite a bit of liquid. If you desire a thicker stew, cook without a lid and/or add a thickening agent (such as flour or cornstarch) mixed with a bit of water at the end.

  9. Can be served over garlic mashed potatoes. If potato pieces are desired, allow them to cook in the stew at least a half an hour before the stew is finished.
