Absolutely fabulous! I'm not a fan of pot pies but this one? so good! the sauce flavour is quite mild, so feel free to add a bit more spices. Takes a bit of time, only because you have to chop and precook all the veggies; but tastes so good, it was worth it!

Recipe Ingredients for Homemade Veggie Pot Pie

2 cups water
2 carrots, thinly sliced
1 stalk celery, thinly sliced
1 cup diced green beans
2 tbsp olive oil
1 med onion, finely diced
3 cups (8 oz) sliced mushrooms
1 red bell pepper, diced smallish
1/3 cup flour
1 cup skim milk
1 tbsp soy sauce
1/4 tsp dried basil
1 pinch dried oregano
1/2 tsp salt
1 freshly ground pepper
8 1/2 oz (1 sheet/1/2 a 17oz box) puff pastry

Recipe Directions for Homemade Veggie Pot Pie

  1. place water in saucepan and bring to boil. Add carrots and celery, cook 2 mins. Add green beans and simmer until veggies are tender, about 5 mins. set aside (don't drain veggies).

  2. heat oil in large skillet over med. heat. Add onion, mushrooms, and red pepper, saute until mushrooms are juicy and peppers are tender, at least 10 mins.

  3. Sprinkle flour over veggies. Toss and cook, stirring constantly, for 2 mins. Veggies will be dry and flour will brown slightly.

  4. Pour in carrot and liquid mixture, milk, and soy sauce, and stir continuously until gravy comes to a boil. Scrape the bottom of the skillet to remove and incorporate any crusty tidbits. Boil 1 min, or just until mixture thickens. Stir in spices. Scrape mixture into a shallow 1 1/2 quart baking dish (such as 12x7x2in pyrex). Let cool to room temp.

  5. Meanwhile, thaw puff pastry at room temp for 30 mins, or until completely defrosted but still cool.

  6. Preheat oven to 400.

  7. Lightly flour a work surface and the top of the pastry sheet. Roll pastry until it is a little larger than the top of the baking dish. Place pastry on cooled filling and let it extend 1 inch or so up the sides of the dish. trim with scissors to fit evenly. With a sharp knife, cut a few slits in pastry to create steam vents.

  8. Bake pie 30 mins, or until pastry is a rich golden brown.
