Homemade version of veggie pho, with curry powder for added flavor

Recipe Ingredients for Homemade veggie pho

1 serving Blue Dragon Fine Rice Noodle
1 carrot Carrots
4 clove Garlic
1/2 medium Onions
1 stalk, medium (7-1/2" - 8" long) Celery
1 cup, chopped Broccoli
1 cup, pieces or slices Mushrooms
2 1tsp Olive Oil
2 wedge yields Lime Juice
1/4 cup Coriander Leaves
1 teaspoon Chilli Powder
1 tsp Garlic Powder
1 tsp Turmeric, Ground
1 tsp Pepper, Black
1 tsp Curry Powder
4 cup (8 fl oz) Water
1/2 tsp Kosher Salt

Recipe Directions for Homemade veggie pho

  1. Soak rice noodles in warm water, put aside until soup is finished

  2. Chop vegetables into bite sized pieces

  3. Add 2 Tbsp olive oil to a 4q or more pot

  4. Gently saute all vegetables together, add the garlic last so it does not burn

  5. Add curry powder, turmeric, chili powder, black pepper and garlic powder to pan

  6. Stir ingredients for 1-2 minutes or until vegetables are fragrant

  7. Add 4 cups of water and 1 tsp salt

  8. Bring to a boil then lower to a simmer for 15 min

  9. Drain rice noodles and add them to soup, continue to simmer for 5 min or until noodles are soft

  10. Add optional hoisin sauce off of heat, mix in well

  11. Serve with lime and cilantro
