A homemade lasagna for vegetarians. Mascarpone cheese can replace the Ricotta if desired. Season to taste. Goes well with toasted ciabatta.

Recipe Ingredients for Homemade Vegetarian Lasagna

100 g egg noodles
200 g tub or ricotta
9 oz pasta sauce
100 g mozzerella
1 egg
1 pinch of salt
1 pinch of pepper
200 g spinach
7 mushrooms
1/2 onion
1 zucchini

Recipe Directions for Homemade Vegetarian Lasagna

  1. Preheat oven to 180C of 350F and prepare a lasagna/casserole dish by greasing it very lightly with butter.

  2. Drizzle some olive oil in the bottom of a cooking pot and heat over a medium-high temperature.

  3. Chop mushrooms and zucchini to desired size, and roughly chop spinach. Add all of the vegetables to the cooking pot and stir every so often. Let these cook for around 15 minutes.

  4. While the vegetables are cooking, in a medium bowl, add the ricotta (or mascapone) and one egg. Add a pinch of salt and pepper and combine ingredients until they make a smooth sauce.

  5. Take the mozzarella and tear it with a knife, set aside.

  6. In the baking dish, put down a layer of tomato sauce. Then a layer of egg lasagna noodles, then spread a third of the ricotta white sauce. Top the white sauce with half of the vegetables. Then top with tomato sauce.

  7. Then continue with: noodles, another thrid of the white sauce, the rest of the vegetables and a sprinkling of half of the mozzarella. Then some tomato sauce.

  8. Then top it all off with a layer of noodles, white sauce, tomato sauce, and the rest of the mozzarella.

  9. Place in the center of the oven for about 50 minutes.
