roasted vegetables meet fresh vegetables - blended until smooth - it's almost like butternut squash soup but not quite.

Recipe Ingredients for homemade vegetable soup - smooth

1/2 cup carrots
4 cups cauliflower
1/2 cup yellow onion
1/2 cup celery
1/2 cup bell peppers
1/3 cup roasted red pepper
1/3 cup roasted garlic
1 teaspoon pepper
1 teaspoon cayenne pepper
1 teaspoon cumin
1/2 teaspoon salt
2 tablespoons olive oil
6 cups chicken stock

Recipe Directions for homemade vegetable soup - smooth

  1. roast red pepper and garlic (or used jarred)

  2. roast carrots (all with a tablespoon of olive oil)

  3. add finely chopped onion, celery and peppers to a pot with a tablespoon of olive oil - allow to sweat for about 2-3 minutes...

  4. add in cauliflour and chicken stock - let boil til cauliflour is mashable.

  5. add in roasted vegetables

  6. seasoning

  7. reduce to simmer for 30 minutes

  8. use immersion blender to make smooth or desired consistency
