Recipe Ingredients for Homemade Vegetable Soup

2 tbsp Olive oil
2 onions, chopped
2 cups celery, chopped
1 cup carrots, diced
2 tbsp garlic
8 potato, diced
1/4 cup fresh parsley
3 cups chicken broth
1 cup beef broth
1/8 cup fresh basil
16 oz diced tomato, can
2 cups water
1/4 cup corn, frozen
2 cups okra, frozen

Recipe Directions for Homemade Vegetable Soup

  1. Heat 2 tbsp olive oil in lg pot

  2. saute onions, celery and celery hearts, garlic, carrots

  3. add finely chopped herbs

  4. add 1 cup beef broth and potatoes- boil 2 min

  5. add 3 cups chicken broth- boil 2 min

  6. add diced tom, corn, okra, 2 cups water bring to boil and turn low

  7. cook for at least 30 minutes on low and stir occasionally

  8. note: you can add one can tom as rotel - for spicy lovers or toss a couple of shakes of hot sauce.

  9. add 2 bay leaves for extra flavor
