Delicious. Substitute vegetable broth for beef broth for a vegtarian recipe.

Recipe Ingredients for homemade vegetable soup

4 carrots
2 potatos
4 tomatoes
1/2 onion
8 oz corn
8 oz green beans
4 stalks celery
8 oz sweet peas
32 oz beef broth
1 tbsp salt
1 tbsp pepper

Recipe Directions for homemade vegetable soup

  1. bring equal parts beef broth and water to a boil

  2. peel and cut carrots, potatos, onion, and celery and add to broth

  3. simmer on medium/low heat for 45 minutes

  4. cut up tomatoes and add to pot

  5. add remaining ingredients and simmer on low heat for another 30 minutes
