Recipe Ingredients for Homemade Vegetable Soup (low fat)

180 grams, chopped Broccoli
70 grams Leeks, (Bulb And Lower Leaf-portion)
60 grams (7-1/2") Carrots
60 grams slices Parsnips
398 ml Peas, Green
25 grams celery
15 ml Butter
1 1/2 liters water
2 1/2 ml cumin

Recipe Directions for Homemade Vegetable Soup (low fat)

  1. Chop all vegetables

  2. Dissolve butter in a large pot (on medium heat)

  3. Fry chopped parsnip, leeks and carrots on butter until they soften slightly and change colour

  4. Add 1 to 1.5 litres boiling water. Bring back to a boil and add pease and brocolli.

  5. Add 1 tsp cumin and 1 tsp pepper.

  6. Cook on low heat for minimum one hour.

  7. Serves between 8 to 10.
