AN easy homemade soup, great if you have an abundance of vegetables from a happy garden! I use all fresh vegetables but you could substitute frozen corn carrots or bean...but you would be sacrificing the beautiful taste!

Recipe Ingredients for Homemade vegetable Soup with Beans

1 tbsp olive oil
5 cloves garlic
5 large tomatoes, chopped
2 cups chicken broth
1 medium zucchini, chopped
8 oz baby bella mushrooms
2 cups green beans, diced
2 cups carrots, chopped
2 cups corn, cooked and cut off cob
1 3/4 cups dark red kidney beans
1 3/4 cups red beans
1/4 cup basil leaves, chopped
1 package spinach, fresh
1 tsp salt
1/2 tsp pepper

Recipe Directions for Homemade vegetable Soup with Beans

  1. heat olive oil in pot on medium high heat

  2. add garlic and sautee until tender

  3. add tomatoes and cook until tomatoes soften and start to "juice up"

  4. add broth, green beans, carrots, corn, cannellini beans, basil, salt, and pepper bring to a boil and reduce heat to med low cooking until vegetables are tender, if necessary add water if it starts to get too thick.

  5. Add spinach letting spinach wilt.

  6. Serve hot with bread or alone also great topped with a little parmesan!
