Packed with nutritious vegetables, this is a very inexpensive way to use up leftover turkey legs. Plan on feeding a crowd. Fat free, low-sodium broth will cut calories more. Analysis used regular broth. Makes 7-8, 2-cup servings.

Recipe Ingredients for Homemade Turkey Leg Veggie/Rice Soup

2 cans chicken broth, fat-free, low-sodium
16 oz tomatoes, home canned without salt
2 c. turkey, without skin, cooked, chopped
3/4 c. onion, chopped
1 t. garlic, minced
1 c. celery, chopped
1/2 t. basil
1/2 t. sage
1/2 t. savory
1 T. parsley
1/2 c. spinach leaves, chopped
1/8 t. pepper
3 medium potatoes, with skins, chopped small
4 large mushrooms, chopped
1 c. broccoli, frozen
1 c. carrots, chopped
3/4 c. rice or 1 cup noodles
2 c. water

Recipe Directions for Homemade Turkey Leg Veggie/Rice Soup

  1. Place turkey legs (previously cooked) in large dutch oven.

  2. Add chopped onions, celery, garlic, chicken broth and tomatoes.

  3. Cook until turkey starts to fall off bones (about 1 hour), and remove skin as soon as possible.

  4. Then pull out legs and remove meat from bones, chopping finely.

  5. Return meat to pot with all spices and chopped carrots. Add rice and extra water, if using long-cooking rice.

  6. Chop potatoes and cut spinach, broccoli and mushrooms, and add altogether about 1/2 before you want to eat. (You can let this cook as long as you want, but add these veggies last if you want them to keep their color and texture.)

  7. Serve with bread and butter, and you have a complete meal.
