Recipe Ingredients for Homemade Tuna - Sweet Potato Cakes

600 g sweet potatoes
300 g chunk light tuna
110 g onions
3 g garlic
50 g egg
1/4 tsp black pepper
100 g polenta

Recipe Directions for Homemade Tuna - Sweet Potato Cakes

  1. Cook the sweet potatoes in a pan of simmering water for 20mins. Drain well and mash.

  2. Add the tuna, spring onions, and egg, and black pepper and mix well. Divide the mixture into 8 equal pieces and shape into patties.

  3. Put the polenta on a plate and dip the fish cakes in it until coated on all sides.

  4. Place on griddle for 10 mins each side or until golden.

  5. Alternatively, pan fry in 3 tbs EVOO.
