We don't buy top ramen because of how unhealthy it is. I created this recipe to satisfy the desire for ramen soup and the kids absolutely love it!

Recipe Ingredients for Homemade Top Ramen

2 tbsp olive oil
2 tsp sesame oil
1 large onion, chopped
2 carrots, sliced
3/4 cup celery, bias cut
3 cloves garlic, minced
1 cup water
4 cups chicken stock
2 tbsp brown rice miso
2 tsp Liquid Aminos
12 shrimp
2 tsp rice vinegar
1 bunch green onions, chopped
4 tsp cilantro, chopped
3 bundles somen noodles

Recipe Directions for Homemade Top Ramen

  1. Add olive oil & sesame oil to pot. When hot add onion, celery & carrots. After 2 minutes add the garlic. Saute until it barely begins to brown and then add the cup of water. Cover and let it steam until the vegetables are soft. Add more water if necessary.

  2. Add half of the chicken stock and blend in the miso paste. When miso is well blended add the rest of the chicken stock and liquid aminos (you could substitute soy sauce).

  3. In a separate pot cook your somen according to the package directions.

  4. While somen is cooking add the shrimp and when they are fully cooked add the rice vinegar.

  5. Split the somen between 4 bowls and add the soup broth to each. Top each bowl with green onions and cilantro.

  6. For a little heat, mix in a little Sriracha.
