My version of Williams-Sonoma's tomato soup while living in Italy.

Recipe Ingredients for Homemade Tomato Soup

1 tbsp olive oil
2 1/2 lbs canned tomatoes
3 cloves garlic
1 yellow onion, chopped
1/2 cup fresh basil
4 cups water
1 serving bouillon
1/4 tsp salt
1/2 tsp pepper

Recipe Directions for Homemade Tomato Soup

  1. Heat oil in a big pot over medium heat.

  2. Add chopped onion and saute until translucent; add garlic and cook another minute.

  3. Add tomatoes and chicken stock and simmer until ingredients are well combined and heated through.

  4. Blend soup through a food processor, blender, or with an immersion blender, add salt and pepper to taste.

  5. *Serve with a piece of whole-grain baguette and some fresh Parmesan or mozzarella cheese.
