Homemade nuggets made from Tofu. Can be made with substitutes as well. I made mine tonight with Almond milk. Although it separated a little, it still came out tasting fine. Try other combinations as well. Sometimes I marinate them with light salad dressing such as Italian or Newman's Own Lite Honey Mustard or even some juice from a pickle jar. Make sure it at least marinade consistency though by adding some mustard or something of like consistency.

Recipe Ingredients for Homemade Tofu Nuggets

1 block Tofu, Firm
1/2 cup Milk, Reduced Fat, Fluid, 2% Milkfat
3 tsp Mustard
4 oz Breadcrumbs
1 tsp Pepper, Black
1 tbsp Parmesan, Grated Cheese

Recipe Directions for Homemade Tofu Nuggets

  1. Prep ahead of time: Remove tofu from package and wrap in a paper towel or cheesecloth. Cover with a cutting board or something sturdy. Place a weight on top (can of beans or anything heavy enough to press the tofu). Leave for at least 30 minutes. Once pressed, place in a freezer bag or freezer safe container. Leave until ready to use. To cut down some time if you plan to make this more than once, squeeze and press a few tofu blocks at a time.

  3. Once ready to use, defrost or heat in the microwave in the microwave. I usually heat mine on high for 2 minutes. Once the plate is cool enough to pick up I angle it over the sink and press lightly with a wooden meat tenderizer or potato masher to remove water. I'm sure clean hands would work too but the tofu can be kind of hot. Then I flip it over and repeat the process, 2 mins in microwave, then press.

  4. I like my tofu pretty dry, so I wrap it once more in a cloth or paper towel and leave to set for about 15-30 mins with a weight on top. It seems a lot of work, but it really isn't I swear. :) Or maybe I've just gotten used to it I don't know lol.

  5. Once pressed, cut the block into 3 even pieces. Then split each piece in half length wise. You should now have 6 long pieces. Cut each piece into 3 pieces. Or any other shape you want, but that's how I do it, so that I have 18 pieces to share.

Place the tofu pieces into the marinade (in this recipe, this includes the milk and mustard or other ingredients you'd like to use as a marinade) I like to place mine all into a big plastic container or bag, secure it and shake it around then let it set. The longer you set it the more it will absorb the flavors. Even if it doesn't, it still tastes darn good with some mustard and ketchup.

  7. Once the tofu is marinated, preheat the oven to 425*F. Coat tofu with breadcrumb mixture. My fave way is to place breadcrumbs, pepper and parmesan cheese into a big bag and shake until mixed. Then add the tofu and shake until well coated. Seems the fastest way to get it done.

  8. Spread or drizzle olive oil in a pan. Place tofu pieces in the pan and drizzle or brush on a little oil on top. Bake on each side for 15 minutes or until golden brown.
