This was modified from a tuna fish - sweet potato cakes recipe I found while browsing cookbooks in Five Below. (used 300g of pre-cooked lentils)

Recipe Ingredients for Homemade Sweet Potato - Lentil Cakes

600 g sweet potatoes
300 g lentils
110 g onions
1/4 tsp black pepper
1/4 tsp salt
100 g polenta

Recipe Directions for Homemade Sweet Potato - Lentil Cakes

  1. In separate pots, cook the sweet potatoes and lentils in simmering water for 20mins or until fork tender. Drain well and mash potatoes and lentils together.

  2. Add the onion, black pepper, and salt and mix well. Divide the mixture into 8 equal pieces and shape into patties.

  3. Put the polenta on a plate and dip the cakes in it until coated on all sides.

  4. Place on griddle for 3 mins each side or until golden. Alternatively, pan fry in 3 tbs EVOO.
