Recipe Ingredients for Homemade Southern Biscuits

2 cups Flour
4 Tbsn Baking Powder
3/4 tsp Baking Soda
1/4 tsp salt
2 Tbsn Butter
2 tbsp Shortening
1 cup Skim Milk
1 tbsp lemon juice

Recipe Directions for Homemade Southern Biscuits

Pre-heat oven to 450F. Combine dry ingredients and mix (I use my fingers to get more air into the flour). Rub or cut in fats fast enough to avoid the fats from melting or getting too soft. The dough should look crumbly. Make a valley in the dough and pour in Buttermilk or skim milk with lemon juice added. Mix together until just combined. Handling as lightly or little as possible, turn out onto floured mat and dust top with more flour. Dough will be sticky and soft. Gently turn dough about 5-6 times. Roll out and cut out biscuits. Place on cooking sheet or pie pan close together to make them rise instead of spreading out. Cook for 10-12 mins (checking on them occassionaly to prevent burning. Cook until tops are light brown. Cool a bit and eat.
