Recipe Ingredients for Homemade Slow-Cooker Pumpkin Spaghetti Sauce

3 cups Diced Tomatoes, No Salt Added
1 cup Pumpkin
1 medium yellow onion
3 garlic cloves
4 tbsp Tomato Paste
1 teaspoon oregano
1/2 teaspoon basil
1/4 teaspoon parsley
1/2 teaspoon Spices Ground Black Pepper
1/4 teaspoon chili powder
1/8 teaspoon sea salt
1/4 teaspoon thyme
2 tablespoons extra virgin olive oil

Recipe Directions for Homemade Slow-Cooker Pumpkin Spaghetti Sauce

  1. 1. First, dice the onion, and mince the garlic into fine pieces. If you don't have fresh garlic, use 2 tsp. of pre-minced garlic instead. Set aside.

  2. 2. Next, open the cans of fire-roasted tomatoes, the pumpkin, and the tomato paste. Empty each of the contents into your slow-cooker, and stir to incorporate throughly, or use a hand-held mixer if needed.

  3. 3. Add the olive oil, spices, salt and pepper, and stir again.

  4. 4. Lastly, add in the onion and garlic that has been diced and minced in step 1, and stir well.

  5. 5. Place the lid on the slow-cooker and power on to low for 3 hours or cook on high 1.5 hours, depending on when you want to serve the dish.

  6. 6. Serve over your favorite pasta, meat, or anything else!
