This is a great recipe for dipping those baked taco chips into, or use as a topping for the Spanish Chicken and Rice pot receipe.

Recipe Ingredients for Homemade salsa

1 medium tomato
4 ounces Spanish olives with pimentos
1 tsp taco sauce
1/2 green bell pepper
1 scallion

Recipe Directions for Homemade salsa

  1. Remove seeds from tomato.

  2. Finely chop tomato, olives, bell pepper and scallion.

  3. Drop in bowl and add taco sauce. For an extra kick you can add your favorite hot sauce instead.

  4. Toss lightly with fingers.

  5. You can add 1/2 of this salsa to previous chicken recipe and then top each plate with a small amount.
