Potato pancakes that are delicious topped with steamed spinach and a poached egg.

Recipe Ingredients for Homemade Rossti

4 medium potatoes
3 tbsp olive oil
1 tbsp margarine or butter, optional
2 tsp salt
2 tsp pepper
2 spring onions, diced

Recipe Directions for Homemade Rossti

  1. Boil potatoes for 5-6 minutes until just tender. Drain and cool, remove skins.

  2. Grate into a bowl and add salt and pepper to taste. Add diced onions.

  3. Use hands to make 4 thin potato pancakes.

  4. Heat large pan with oil.

  5. Add potato pancakes, cook for about 5 minutes each side or until golden.

  6. Enjoy!
