Recipe Ingredients for Homemade Ratatouille

1 1/2 oz green bell pepper, chopped
2 1/2 oz red bell pepper, chopped
3 oz onion, chopped
7 oz zucchini, diced
13 oz eggplant, diced
12 1/2 oz tomato, quartered
1 tsp thyme
2 cloves garlic
3 tbsp olive oil

Recipe Directions for Homemade Ratatouille

  1. Saute peppers, garlic and zucchini in oil

  2. Add tomato and thyme to mix

  3. Saute eggplant and onion in oil in separate pan

  4. Combine all ingredients

  5. Salt and pepper to taste

  6. Cover and simmer for 5 min
