Lower fat muffins using fresh pumpkin

Recipe Ingredients for Homemade Pumpkin Muffins

2 cups fresh cooked pumpkin
3 1/2 cups all-purpose flour
2 tsp baking soda
1 cup sugar
1 cup Splenda
4 eggs, beaten
1 cup unsweetened applesauce
1 1/2 tsp salt
2 tsp cinnamon
2 tsp nutmeg
1/2 tsp allspice
1 cup chopped pecans
1/2 cup raisins

Recipe Directions for Homemade Pumpkin Muffins

  1. Preheat oven to 350 degrees.

  2. In a large mixing bowl, stir together the dry ingredients.

  3. Add the eggs, applesauce & pumpkin.

  4. Stir until blended.

  5. Add raisins and nuts. Mix well.

  6. Pour into muffin tins sprayed w/Pam Baking spray.

  7. Cook for 20 minutes.

  8. Cool in pan for 10 minutes, then put on cooling rack.

  9. Wrap in plastic wrap and refrigerate. Keeps well in fridge and can also be frozen.
