Lovely cold weather dish. No cream.

Recipe Ingredients for Homemade Pumpkin and Ginger soup

1 kg raw pumpkin
100 g onion
2 T butter
4 cups low fat chicken broth
25 g fresh ginger
2 T soy sauce

Recipe Directions for Homemade Pumpkin and Ginger soup

  1. melt butter - add in finely chopped onions and ginger - saute until soft

  2. add in chopped pumpkin and soy sauce + broth.

  3. Cook until pumpkin is soft

  4. blend.

  5. sprinkle with a little chopped parsley if you wish - kids love pasta alphabets added in.
