Recipe Ingredients for HOMEMADE PRETZELS

4 T butter, melted
1 1/2 cups water
1 T Sugar
2 t Kosher Salt
1 package active dry yeast
22 ounces All Purpose Flour
1 egg yolk
1 T water

Recipe Directions for HOMEMADE PRETZELS

  1. Place Yeast, sugar and salt together and let sit for 5 minutes.

  2. Place all ingredients in mixer with dough hook on LOW speed until dough comes together.

  3. Boost speed to MEDIUM for 4-5 minutes. Dough should be nice, smooth, and satiny.

  4. Spray mixing bowl lightly with non-stick spray, place dough-ball back in mixing bowl, cover with a tea towel, and proof for 1 hour. (Dough should double in size)

  5. Set oven to 450. Prepare 2 sheet pans lined with parchment paper and lightly lubed. Have 2 moist tea towels standing by.

  6. Section dough into eight 4.5 ounce pieces.

  7. SHAPE: Squish ball of dough with heal of hand. Roll out to a snake. Target length is 24?. Then create a pretzel shape and place on baking sheet with lightly lubed parchment paper. Cover with Tea towel, give a few spritzes of water? repeat for all 8 portions.

  8. BATH: Use 10 cups of boiling water with 2/3 cups of baking soda for your pretzel bath. Bathe pretzels 2 at a time for approximately 30 seconds. Continue until pretzels have all been bathed.

  9. Baste all pretzels with a mixture of 1 egg yolk thinned with 1 T of water. Sprinkle with Kosher or Sea Salt.

  10. Bake in 450 oven for 14 minutes / turn pans half-way through.
