Lighter potato salad based on fam. recipe. About four one cup servings in my experience.

Recipe Ingredients for Homemade Potato Salad

2 yukon gold potatoes
1/2 large white onion
1/4 cup eggbeaters original
1/4 cup eggbeaters egg whites
1/4 cup mayonnaise w/olive oil (kraft)

Recipe Directions for Homemade Potato Salad

  1. Cube potatoes, skins on - boil - 15 minutes or less.

  2. chop or mince onion

  3. hard boil whites & "whole" eggs - custard cups in water bath

  4. cool & cube cooked eggs

  5. salt & pepper to taste

  6. chill & serve
