Potato salad perfect for picnic or potluck

Recipe Ingredients for Homemade Potato Salad

6 large potatoes, peeled and diced
1 large sweet potato, peeled and diced
1 large onion, peeled and diced
1/2 cup green pepper, diced
1 stalk celery, diced
8 eggs, hardboiled and peeled and mashed
1 1/5 cup sweet relish
2 tablespoons Mustard
1 1/2 cups Mayonaise

Recipe Directions for Homemade Potato Salad

  1. Peel and dice potatoes and sweet potato. Place in pot and cover with water. Cook until tender but not mushy.

  2. Place eggs in cold water and boil until cooked throughout. When done, take out and wash and peel then mash and place in large serving bowl.

  3. Peel and dice onion. Place in large serving bowl.

  4. Dice green pepper and celery. Add to large serving bowl.

  5. Add mashed eggs, sweet relish.

  6. Once potatoes are done, drain and place in large serving bowl. Add mustard and mayonaise and mix thoroughly. Add salt and pepper to taste.

  7. Best served warm.
