Recipe Ingredients for Homemade Pita Pockets

1 cup warm water
1 tbsp olive oil
1 tsp salt
2 tsp sugar
3 cups white flour
1 1/2 tsp yeast

Recipe Directions for Homemade Pita Pockets

  1. Place in breadmachine in order given, process on dough setting

  2. punch down and turn onto lightly floured surface. Using a sharp knife, cut dough into equal pieces. For each piece into ball. Roll into 6 to 8 inch circle.

  3. As you roll rounds, set aside on floured countertop, and cover loosely with towel. Let rise for about 25-35 minutes, until slightly puffy. (The rounds will still be thin though).

  4. Preheat oven to 500 degrees. Place 2 rounds side by side onto a wire rack, such as is used for cooling things. Place rack in middle of oven Bake for 4 - 5 minutes, until puffy. (They will look like balloons.) If bread is too browned, it will be dry and not pliable.

  5. Remove rack from oven and immediately layer pita bread between 2 damp (not wet) towels to soften. Allow bread to completely cool. If necessary gently push on pitas to allow air to escape, becareful not to break the seal on the pitas.

  6. Cut pita breads in half, or split the top edge, and fill as desired

  7. Store pitas in plastic zipper bag in fridge for a few days, or place in the freezer for longer storage. To re-warm pitas, wrap in damp towel and the wrap in foil, and place in 200 degree oven for 20 mins.
