Homemade Pesto Recipe

Tastier, a bit darker in color, and much more textured than what you buy at the store. Makes about 1 1/2 cups of pesto, enough for 1lb of pasta: Each serving is 2 tbsps.

Recipe Ingredients for Homemade Pesto

2 cups fresh basil leaves, tightly packed
1/3 cup parmesan cheese, grated
1/2 cup pine nuts
5 cloves garlic
8 tbsps olive oil
1 tsp salt

Recipe Directions for Homemade Pesto

  1. Either in a large, sharp knife or in a blender, chop basil, garlic, and pine nuts as small as possible.

  2. Mix the chopped ingredients.

  3. Add grated parmesan or romano cheese, ideally fresh. Just eyeball it - you may use less than what is written in the recipe. Be careful not to let the cheese overwhelm the other ingredients.

  4. Crush the mixture with a mortar and pestle, a little bit at a time, until the ingredients blend together.

  5. Transfer the mixture into a bowl and add olive oil. If you want to use the pesto for pasta, use more oil for a more liquid, sauce-like consistency. Also, add 1 tbsp more salt for every 1lb pasta. If you want to use the pesto as a topping or dip, use less oil.

  6. Store chilled until use.
