Homemade peanut butter. Skinned vs. skinless peanuts: Leaving skins on will result in slightly drier consistency, darker color and harsher flavor but make the overall process much quicker because removing them takes quite a while. If you plan to remove the skins, wait until AFTER roasting and they will come of much easier.

Recipe Ingredients for Homemade Peanut Butter

16 oz Peanuts (Raw unsalted, Virginia Group)
1 tsp Salt, Table

Recipe Directions for Homemade Peanut Butter

  1. ROASTING

  2. Preheat oven to 350 F.

  3. Spread peanuts evenly on a baking pan.

  4. Place pan in oven.

  5. Roast until the nuts are fragrant and LIGHTLY browned (15-20 minutes depending on oven). Be careful because the nuts will continue to cook after removal from the oven. DO NOT OVERCOOK.

  6. Cool on paper towel.

  7. BLENDING

  8. Blend the roasted peanuts in a food processor until they START to emulsify (usually about 4 minutes).

  9. Add salt to taste while processing at this point.

  10. Finish processing to desired texture (usually another 1-3 minutes).

  11. For chunky peanut butter, remove about 1/4 cup of the roasted peanuts after running an initial pulse in the processor and mix back in after processing is complete.

  12. Yield is about 2 cups, a serving is about 1 Tbl.
