Recipe Ingredients for homemade pasta sauce

700 g eggplant
380 g zucchini
1 cup Tomatoes, Crushed, Canned

Recipe Directions for homemade pasta sauce

  1. cut 1 large eggplant and 2 medium zucchini into chunks

  2. salt eggplant and zucchini and place in colander covered with a weighted plate (to reduce bitterness) for 30 minutes

  3. place in pot and cook on medium heat until veggies cook down (~40 min)

  4. toss in 1 tsp each of: crushed coriander, thyme, basil, crushed garlic

  5. add crushed tomatoes

  6. cook down for another 15 minutes

  7. done!
