this is so great to make on a long wet afternoon! The amount of flour depends on humidity, you ma need as little as 1 1/4c or all 2 cups.

Recipe Ingredients for homemade pasta

1 egg
1 T water, very cold
1 t olive oil
1/2 t salt
2 c flour

Recipe Directions for homemade pasta

  1. Combine first 4 ingredients. Add 1/2 c flour and mix til lumps are gone.

  2. Slowly add more flour til you have formed a non-stick ball.

  3. Knead 10 min, adding flour as needed.

  4. Rest 30 min, wrapped in plastic.

  5. Break off golfball sized pieces and roll out til 1-2mm thick (1/8th inch or less). Fold in thirds, and cut into strips.

  6. Hang and dry about 1 hour.

  7. Cook in boiling salted water between 1 and 3 min, depending on thickness. Noodles will float when done.
