From the Joy of Cooking cookbook. Did NOT use sugar or vanilla as the 365 Vanilla Soy Milk is very sweet and flavorful. I also used vegan butter...just need an egg substitute next time!

Recipe Ingredients for Homemade Pancakes

1 1/2 cups all-purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
1 1/2 cups soy milk, vanilla
3 tbsp margarine, melted
2 large eggs

Recipe Directions for Homemade Pancakes

  1. Mix wet ingredients in a separate bowl from the dry.

  2. Pour the wet ingredients over the dry.

  3. Gently mix just until blended.

  4. Spray non-stick skillet with cooking spray.

  5. Pour about 1/3 cup of batter into hot skillet.

  6. Cook until bubbles break on the surface and flip over.

  7. Pancakes should only take about 3 minutes total..

  8. Serve warm with syrup!

  9. Keep them warm in a 200 F degree oven covered with foil.

  10. To freeze-layer in between waxed paper and place in zip top baggie. Microwave when you want them. EASY!
