Tasty oatmeal cookies. Sugar is substituted with honey. Great for picnics and tea parties. (Serves 12)

Recipe Ingredients for Homemade Oatmeal cookies

125 g wholemeal flour
1 1/2 cups rolled oats
1 tbsp Brewers Yeast
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp Primordial Himalayan Sea Salt
1 tsp cinnamon
1 tsp nutmeg
1 tsp ginger
1/2 cup olive oil
1/2 cup honey
1 tbsp blackstrap molasses
1 egg
1 tsp vanilla
1/4 cup currants
1/4 cup walnuts

Recipe Directions for Homemade Oatmeal cookies

  1. Preheat oven to 180C.

  2. Sift flour, salt, baking powder, baking soda and spices.

  3. Add oats.

  4. In a separate bowl, whisk egg and 1 tbsp ice water.

  5. Whisk the rest of the wet ingredients with the egg.

  6. Combine wet and dry ingredients.

  7. Add currants and chopped walnuts.

  8. Chill mixture in fridge for 10 minutes.

  9. Once chilled, make a dozen balls out of the mixture.

  10. Place onto tray covered in baking paper.

  11. Bake for 15 minutes or until the cookies are golden brown.
