Serving Size = 1 cup cooked noodles

Recipe Ingredients for Homemade Noodles

6 jumbo Egg, Whole
0.5 tsp Pepper, Black
2 tsp Salt, Table
12 cup Chicken Broth
0.25 cup (8 fl oz) Water
7 cup Wheat Flour, White, All-purpose, Enriched, Bleached

Recipe Directions for Homemade Noodles

  1. Beat eggs, salt and pepper until smooth.

  2. Add flour a couple of cups at a time until wet dough is formed. Dump onto heavily floured board and kneed in more flour until dough tightens up enough to roll out.

  3. Divide dough in half and roll out to about 1/16" thick. Flour the surface of the rolled out dough. Fold in half. Flour the new surface. Start at one edge of the folded half round and begin to roll in to a roll (like when you make cinnamon rolls). Flour a cutting board and slice the roll thinly. Toss and unroll these little sliced sections as you go to avoid them sticking. Toss in flour to help keep them dry and separated. Repeat with the second half of the dough.

  4. I then toss and tear handfulls of the noodles to further thin them and to break them up a bit. Use more flour as you go.

  5. Spread on cookie sheets and let dry for a little bit. Up to a couple of hours. Check periodically to make sure they aren't sticking to each other. Toss with more flour if they are.

  6. Bring broth to a boil (I always make my own broth by boiling a chicken and some onions and carrots together).

  7. Add noodles by handfuls, stirring after each. Shake off extra flour to prevent broth from getting too thick.

  8. Boil until noodles are tender. 15 to 20 minutes. Stir to prevent sticking.

  9. You can put in chunks of chicken if desired (adds calories) or use beef broth instead of chicken broth.
